Per serving
Wash lettuce leaves and pat them completely dry. Keep them in the fridge to stay crisp.
Heat a large skillet over medium-high heat with sesame oil. Add ground pork.
Cook pork for 5-7 minutes, breaking it apart, until it is browned and crispy bits form on the edges.
Add minced garlic and ginger. Stir fry for 1 minute until fragrant.
Pour in soy sauce and hoisin sauce. Toss to coat the pork evenly and cook for another minute until the sauce thickens and glazes the meat.
Remove from heat and stir in half the green onions.
Spoon the pork mixture into the cold lettuce cups. Top with julienned carrots, remaining green onions, and crushed peanuts.
