Lay the tortilla flat on a cutting board. Spread the cream cheese evenly over the entire surface, leaving a small border at the edges. Sprinkle with oregano.
Layer the spinach leaves flat against the cream cheese, followed by the turkey slices, cheese slice, and red bell pepper strips.
Starting from one end, roll the tortilla tightly. The cream cheese will act as glue to hold it shut.
Using a sharp knife, slice off the uneven ends (eat them as a chef's snack!), then cut the roll into 6-8 even pinwheels.
Arrange flat side down on a plate or pack tightly into a container.
Pat the spinach and peppers dry before adding to prevent the tortilla from getting soggy.
Store in an airtight container in the fridge for up to 3 days. Keep them tightly packed to prevent unrolling.
